Biography

Dr. Ong is an Associate Professor in the Department of Chemical and Environmental Engineering at the University of Nottingham Malaysia­. She received her first degree in chemical engineering (BEng Hons) from the Universiti Teknologi Malaysia (UTM) and later obtained her doctorate degree (PhD) from the University of Nottingham. She is a Fellow of the HEA (FHEA), a registered Charted Engineer (CEng) with the UK Engineering Council, a Charted Member of the Institution of Chemical Engineering (MIChemE) and a Graduate Member of the Board of Engineers Malaysia (BEM). Currently, she serves as one of the editors of IChemE EdSIG newsletter. She has a special interest on the usage of modern tools in enhancing the teaching and learning. She has been teaching process control & dynamics, fat & oil processing and oleochemicals for years. Her research areas are mainly in industry drying, food microstructure, processing of phytochemicals, edible antioxidants, antidiabetics, product development, process optimization and simulation.

Current Research

Current main research interest is to develop new food products (from raw farm materials ranging from fruits and vegetables to herbs) for health benefits and food diversification. She is also keen in developing sustainable and green drying and food processing technologies in preserving foods as naturally as possible without compromising the delicacy and nutrition. In addition, her research areas also encompass the natural phytochemicals, antioxidants and antidiabetics processing as well as sensory evaluation, microstructure assessment and predictive modelling development.
